This creamy vegan tikka masala is the curry of your dreams, thick creamy, delicious and full of flavour!
Ever since becoming vegan i've been dreaming of a thick and creamy tikka masala, it used to be one of my favourite curries but was replaced by Balti because masala sauce is heavily dairy based. I was inspired by a recipe I saw on instagram and decided to make my own version of this wonderful dish. I'm proud of the results and promise you it will blow your mind!
- 4 Garlic Cloves
- 1/2 inch Fresh Ginger
- 1 Onion
- 2 TBS Tikka Spice
- 2 cans Tinned Tomatoes
- 1 can Coconut Milk
- 1 Cup Cashews
- 700g Potatoes
- 1 cup Kale
- 1 TBS Olive Oil
You can switch out the roast potatoes for any veggies of your choice or even tofu/chick peas. This sauce is the perfect base for any curry, so you could even expereiment with the spices that you put in and get a super creamy korma or any other type of curry.
