Creamy Coconut Lentil Dahl

As some of you may know I now live in a camper van full time! That has brought with it a few different challenges but has also created some epic one pot recipes, this Creamy Coconut Lentil Dahl is one of them. This Dahl is amazing with rice, naan bread or even served cold with a salad or as dom likes to have it… in a sandwich the next day, haha!

It’s a low maintenance meal & one we’ve eaten over and over again in the last few months. It’s quickly become our fave & hopefully it will be yours too.

 
Creamy Coconut Lentil Dahl

Creamy Coconut Lentil Dahl Ingredients

·       1 Cup Slit Red Lentils

·       1 Can Diced Tomatoes

·       1 Can Full Fat Cococnut Milk/Cream (cream make the dish a lot richer)

Spices

·       1 1/2 tsp Turmeric

·       1 1/2 tsp Cumin

·       1 tsp Garlic

·       1/2 tsp Ginger

·       Salt & Pepper to taste

OR

·       1 TBS Curry Powder

 

Instructions

Place 1 cup lentils into a large pan

Add tinned tomatoes & simmer for 5 mins until the tomatoes are hot

Add 1 Tin Coconut Milk & Stir

Put all of the spices into the pan & stir until evenly coated

Place lid on and leave to simmer for 20/30 minutes until lentils are soft. Stir occasionally to avoid it sticking

Serve alone, with rice or cold with salad!
