Delicious Lentil Dahl

Lentil Dahl is a really belly filler, it's packed with nutrition and always goes down a treat. It's nice hot or cold and goes really well with a salad. I like to eat mine by it's self or with rice but you could even pair it with a jacket potato, the posibilities are literally endless.

Lentil Dahl (Vegan)
Lentil Dahl is one of my favourite dishes, it's so quick and easy to make especially if you're meal prepping for the week.
Ingredients
  • 250g Split Red Lentils
  • 700ml Veggie Stock
  • 1 Onion
  • 400g / 1 Large Sweet Potato/White potato
  • 1-2 Inches ginger
  • 2-4 Cloves garlic
  • 1 1/2 - 2 Teaspoons Cumin
  • 1 1/2 - 2 Teaspoons Tumeric
  • Handful freshly chopped Parsley
  • 1/2 Spring Onion
  • 100- 150g Spinach
Instructions
Sauté the onions, garlic and ginger until fragrantAdd in the Cumin and Tumeric, stir togetherPour in the veggie stock and add the sweet potatoes and lentilsBring to a boil and then leave to simmer for 15-20 minutes until the sweet potatoes are cooked throughNote - towards the end of the cooking time be sure to keep your eye on the lentil dahl so that it doesn't stick to the bottom of the panServe in a bowl and add the freshly chopped parsley and spring onion. Enjoy!
