Why Living an intentional life is the best thing you will do in your life: There’s something meditative about drinking a cup of tea. Watching the steam rise from my tea cup always puts me in some sort of delightful trance. I feel a sense of calm wash over me; I feel light, liberated, free.
I haven’t always felt this way, some days I felt like my brain was scrambled and my nerves were fried. I threw myself into bed at way past midnight before sleeping for what felt like two seconds, which proceeded to waking up just as tired as I went to sleep.
As some of you may know I now live in a camper van full time! That has brought with it a few different challenges but has also created some epic one pot recipes, this Creamy Coconut Lentil Dahl is one of them. This Dahl is amazing with rice, naan bread or even served cold with a salad or as dom likes to have it… in a sandwich the next day, haha!

Carrot and ginger soup is so yummy but it takes it to the next level when you add spiced roasted chick peas! I woke up the other day wanting something really soothing and warming that would fill me up but not make me feel completely stuffed and that’s when I came up with this delicious recipe! It’s so simple and easy to make, it’s also great to make ahead of time and have in the fridge or freezer for a filling snack between meals.
A question I get asked all the time is “how do you afford to travel so much?” and “how do you travel on a small budget” so today I want to give you all of the advice I can possibly think of to help you to understand how I manage it! I’ve travelled to many countries in my life but in the last few years I’ve experienced first hand being a long-term backpacker, I’ve worked on farms lived in hostels for months on ends and lived in my car along the way. My adventure took me to Australia, Bali, Hawaii and a few states of America before returning home to work for a year saving as much as I could before I arrived in my current destination - New Zealand!

On my journey to minimalism one of the things that I decided to do was create a more minimalist and zero waste skin care routine and because a lot of the products I started using are simple or home made it also means i'm reducing my waste and saving money both at the same time, score!
